Waterkloof Wine Estate produces 'slow wine' on their bio-dynamic estate outside Somerset West. The wine is made using old methods, and the wine farm uses an ""(almost) hands-off"" approach to the fermentation process.
""Our general approach is to use non-interventionist practices where practical, but as a minimum standard to practice the concept of "sustainable agriculture" throughout the farming unit."" The farm has recently added a new ""green-machine"" to it's workforce - Bessie the mini-Dexter cow. The estate uses the manure of it's own Dexter cows to fertilize the soil. """The entire estate is treated as a holistic entity and Waterkloof steers clear of conventional pesticides and fertilisers. By using the manure we create new life in soil which was once treated by weed-killers and compacted by heavy tractors"
